Available in two roasting levels:
Light-Medium
 roast: Fruitier, bright acidity with light body. Recommended for Pour over, and Immersion brewers.
Medium-Dark roast: Sweet, balanced-low fruity acidity, bold, might be a little bitter with medium body. Recommended for Ibrike, Espresso, and Immersion brewers.

About the farmer:
Elkin once stated, “the future of coffee is in its past,” and by this, he refers to the importance of not only looking ahead into the future of the coffee industry, but also recognizing the innovations of the past and building on them. Elkin’s passion for coffee was initiated at a young age, partially through working as an Agronomist for many years.

After several years of experimentation, he has pioneered a new process which he calls “Hydro”. Along with this innovation, he has made improvements to traditional washed and natural processes yielding exciting results.

Processing:
Elkin always measures brix content to determine when to harvest. Once cherries have reached 20-24 Brix sugar content (around 90% ripeness), he harvests the cherries. The traditional Honey processing at El Mirador begins with a rigorous selection period prior to processing. The selected cherries undergo a 90 to 120 hour fermentation period incherry.

Origins:
More than 90% of the world’s coffee can be genetically traced back to Yemen, as it was the first country in the world to consume, commercialize, and export coffee to the world. From its lands, arabica coffee seeds have traveled across the seas and were planted in different origins.

Thousands of Kilometers separate Yemen and those origins, but we have managed to shorten this distance and gather new coffee generations with their source in a new coffee production line; Origins

Packaging
Because we believe in sustainability, our coffee is carefully packed in a 100% recyclable bag with one-way valve and a ziplock to keep it fresh for as long as possible.
Roasting & Freshness
Our coffee is freshly roasted to order in small batches. Please consider some time to rest the coffee (Degas) before brewing it to enjoy the best experience.
Brewing Tips
As beans density plays a big role in your brewing experience, please consider tweaking the water temperature and the grinding size to get the best result.
